The way amiibos work is that some sections of the tag, (those that determine what amiibo it is) are locked into read-only mode. Unless these sections are in fact locked, no Nintendo console (3DS, WiiU and Switch) will accept the amiibo so rewriting/erasing a (working) amiibo-tag is impossible.
